Thật ra , LK đâu có tệ gì cho lắm . Nàng cũng có duyên lắm chứ .
Tại vì đó là ngày xưa , chứ bây giờ là thời đại dao kéo , nếu có tiền , muốn xấu cũng khó lắm .

Chúng tôi từng đến quán Bà Cả Ðọi cách đây tám năm, nay quay lại căn gác đường Quán Cơm Bà Cả Đọi Nguyễn Huệ, Sài Gòn thăm bà. Khung cảnh vẫn y như cũ, nhà cửa không thay đổi, không xây cất sửa sang mới, chỉ có con hẻm nhỏ coi có vẻ còn chật chội hơn trước vì xe đậu quá nhiều.
Xe gắn máy đậu mấy lớp vì ngay đầu hẻm là một hàng cơm bình dân, cuối hẻm một hàng cơm tấm và xe bún mắm đậu khoảng giữa.
Bắt đầu khởi nghiệp từ bà Cả, xem chừng cái ngõ này có duyên nghiệp với hàng cơm, vì sau khi bà Cả đóng cửa hàng của mình thì hai hàng cơm khác mọc ra ngay và thực khách không nề hà chỗ ngồi chỉ là những chiếc bàn thấp bé kê dọc theo một bên hẻm, phía bên kia dựng xe san sát cùng với xô chậu, nồi niêu xoong chảo... Hàng cơm bình dân với thịt kho, rau xào... Hàng cơm tấm với bì, chả, trứng... mùi thức ăn xào nấu thơm lừng.
Nhà bà Cả tít cuối cùng hẻm lại phải leo một cầu thang xi măng để lên nhà. Giữa trưa nắng gay gắt, bà đang ngủ, tôi không muốn phá giấc ngủ của bà cụ tám mươi mốt tuổi nên hẹn chiều quay lại.
Mặc dù tuổi tác khiến quên nhiều, lẫn nhiều nhưng khuôn mặt, hình dáng bà Cả vẫn thế.
Giờ không còn bận rộn túi bụi như xưa, việc làm ăn ngày càng phát đạt nhưng bà Cả thanh nhàn không xênh xang áo gấm, áo thêu xanh đỏ kiểu cọ. Tám năm qua, cũng như mấy chục năm trước, tôi vẫn gặp lại hình ảnh bà nền nã, giản dị trong chiếc quần đen, áo bà ba, hoàn toàn không chút thay đổi trừ mái tóc cắt ngắn bạc phơ hơn. Vẫn vóc người đậm đà, nguyên vẹn gương mặt phúc hậu thường xuyên đậu nụ cười rất dễ mến.
Sài Gòn thiếu gì hàng cơm bình dân, chắc chắn một phần lý do khiến nhiều người thích lui tới hàng bà Cả chính vì vẻ tươi tắn, đôn hậu, chính vì lối trò chuyện từ tốn, chân thật của bà chủ quán, hoàn toàn không giống như tính cách của bà chủ hàng cơm mà các tiểu thuyết ưa mô tả là lanh lẹn và đanh đá.
Nhà thơ Trần Tuấn Kiệt không khỏi mỉm cười khi câu chuyện nhắc tới quán cơm bà Cả Ðọi ngày nào:
- Ðám nhà báo không hiểu sao rất thích bà Cả. Tòa soạn báo Sống nằm trên đường Lê Thánh Tôn, trưa nào Chu Tử cũng kéo anh em đến đó ăn cơm.
Nhà thơ nghĩ một lúc rồi xòe tay đếm.
- Có Anh Quân, Tú Kếu, Nguyễn Thụy Long, Trần Tuấn Kiệt...
Ông tỏ vẻ ngạc nhiên.
- Cái quán thì nhỏ xíu, có mỗi một gian phòng, tới giờ nghỉ trưa ai cũng ùa đến, ngồi chen chúc đụng cả vào nhau ồn ào.
Quả vậy, gian phòng không rộng lắm, khi đông quá, khách phải leo bậc thang gỗ ở gian trong để lên ngồi trên lầu. Hẳn là sự đông đúc náo nhiệt cũng là một yếu tố thu hút khách và giới làm báo có thói quen đến đấy tụ tập, một số chọn như là chỗ đóng đô nên chắc chắn cứ tạt qua gặp mặt đủ cả. Quán cơm bà Cả Ðọi là chỗ họp mặt văn nghệ như La Pagode, như Thanh Thế...
Bà Cả tỏ vẻ vui thích khi kể:
- Cậu Trường Kỳ lần nào về Saigon cũng ghé tôi chơi, có cả cậu Jo Marcel, cậu Tùng Giang...
Bà hay nhắc tới tên Trường Kỳ vì ngày xưa chính anh là người đã bỡn cợt gọi quán cơm của bà là quán “Bà Cả Ðọi.” Cứ khi cạn túi, hết tiền thì ghé đấy ăn bữa cơm vừa rẻ, vừa ngon vừa no. Giới văn nghệ có cảm tình đặc biệt, quán được nhắc đến đây đó trên báo luôn tới nỗi về sau thành chết tên.
[B]“Cả” chứ không phải “Hai”.[/B]
Thật ra quán cơm không sang trọng nhưng vẫn có những đặc điểm riêng biệt. Bà Cả tên thật là Túc, vốn gốc làng Ðồng Nhân, nay thuộc quận Hai Bà Trưng, Hà Nội. Bà vào Nam từ lâu, khoảng 1948, lấy chồng người cùng quê. Thoạt tiên hai vợ chồng mưu sinh bằng cách mở kiosque bán nước giải khát: bia chai, nước ngọt... cho nhân viên, thợ thuyền khu vực Chợ Cũ, Sài Gòn.
Khách đến uống nước thì hỏi ăn, thế là nhân thể bà nấu phở. Rồi theo nhu cầu của khách hàng, từ phở, bà mở thêm hàng cơm. Chẳng bao lâu, khách mau chóng kéo đến càng lúc càng đông đúc ngồi tràn ra làm mất trật tự vỉa hè, chính quyền bấy giờ thấy vậy đuổi không cho buôn bán nữa. Bà rút lui lên căn gác của người chú trong ngõ hẻm đường Nguyễn Huệ và chuyển hàng ăn uống từ vỉa hè về đó.
Khu vực Chợ Cũ dần dần phát triển, cửa hàng, công sở, văn phòng mở cửa... Lại thêm làn sóng di cư năm 54 khiến số lượng người Bắc ở Sài Gòn tăng lên đáng kể. Quán tưởng chừng không thuận lợi về mặt vị trí vì phải đi vào cuối ngõ, phải leo cầu thang mới tới được một căn phòng không rộng rãi lắm ở tận cùng thế giới đó. Té ra hàng ăn vẫn đông, ngày càng đông khách.
Tự nhận chỉ là hàng cơm bình dân nhưng những món ăn của bà Cả nấu sạch sẽ, ngon lành, không khô quèo “cơm hàng cháo chợ” như các hàng cơm bình dân khác, mà mang vẻ “cơm nhà” như được nấu bởi bàn tay hiền hậu của bà mẹ hay người vợ, bởi bàn tay của người nội trợ quen thuộc. Bà Cả phân bua:
- Tôi chỉ nấu món ăn bình dân thôi ấy mà.
Ðúng là bữa cơm của quán bà Cả không cao lương mỹ vị, chế biến không cầu kỳ, trình bày không mỹ thuật, chén đũa cũng bình dân, chỉ là những món ăn gia đình như mâm cơm người ta vẫn thường dọn tại nhà. Thành công mà chính bà không ngờ lại nằm ở chỗ ấy khi người thực khách không có điều kiện ăn cơm nhà, lại có thể thưởng thức một bữa cơm nhà ngay tại quán.
Ðặc biệt, người miền Bắc tha hương trên bước đường lưu lạc tới một vùng đất mới với phong tục, khí hậu, thổ nhưỡng mới, đã tìm thấy nơi quán ăn nhỏ bé của bà Cả một chút phong vị quê hương. Không phải món Nam mà là món Bắc, nêm nếm đúng khẩu vị Bắc không lai tạp, giọng nói Bắc, tính cách Bắc. Một khoảnh quê hương xa lìa đã được bà Cả vô tình tái hiện trong quán ăn của bà làm ấm lòng người xa xứ. Ở miền Nam quanh năm nắng nóng, chỉ trong bữa cơm chốc lát, họ cảm thấy an ủi khi bắt gặp lại một mảnh sinh hoạt gần gũi thân thương tưởng chừng đã mất hẳn. Tên gọi Quán bà Cả chứ không phải bà Hai, bà Bảy, bà Út... càng mang đặc tính “Bắc Kỳ.”
[B]Người của lịch sử văn hóa Sài Gòn?[/B]
Tôi nhìn quanh căn gác Nguyễn Huệ, nhà kiểu Pháp cũ, không sửa sang gì nhiều, vẫn chiếc cầu thang gỗ nâu nằm trong ký ức giới văn nghệ, và hỏi bà Cả:
- Bà có mời khách dùng cơm ở đây không?
Bà lắc đầu:
- Không, bây giờ chỗ này chỉ để ở thôi, tôi mời các cậu ấy ra ngoài quán.
Sau 75, dù không còn cánh nhà báo lui tới nữa, một thời gian dài, quán bà Cả vẫn là địa điểm ăn trưa của giới văn phòng, tư chức... từ các cao ốc chung quanh đường Nguyễn Huệ, Hải Triều, Hàm Nghi, Hồ Tùng Mậu, Ngô Ðức Kế... Khách quen đến ăn chật phòng, như trước kia, đôi khi vẫn phải dọn thêm bàn trên gác lửng.
Sau này bà Cả mua được hai căn nhà ở đường Trương Ðịnh và Tôn Thất Thiệp, hàng cơm được dời ra hai nơi đó với bảng hiệu chính thức là quán Ðồng Nhân giao cho các con trông nom, và gần đây thêm một quán nữa do con gái út đứng làm chủ ở Thị Nghè vẫn giữ cùng một thương hiệu Cơm Bà Cả. Khách hoài cổ đi xa lâu ngày về Sài Gòn vẫn quen lối ghé lại căn gác Nguyễn Huệ cũ kỹ, dọc cầu thang xi măng đặt đầy các chậu cây xanh mướt, không còn quán cơm nhưng may mắn, vẫn còn được gặp bà chủ hiền hậu sẵn sàng ngồi chơi tiếp khách.
Lần trước tôi ghé, bà Cả còn khỏe khoắn, dù quán xá đã có con cháu trông nom nhưng mỗi buổi sáng, bà vẫn đi bộ ra quán nhặt rau. Bây giờ, bà đã yếu nhiều, chân đi chậm chạp từng bước và trí nhớ đã kém, nhớ quên lẫn lộn. Chiều chiều, trời nhạt nắng, cô cháu gái chở ra quán, bà chỉ ngồi trước cửa ngắm nghía hàng cơm vỉa hè thủa nào giờ đây là căn nhà hai gian rộng rãi, cửa hàng khang trang góc ngã tư nằm ở những con đường sầm uất giữa thành phố.
Có nhiều người chưa từng biết mặt bà Cả, chưa ăn hàng cơm Nguyễn Huệ trước kia bao giờ nhưng truyền miệng nhau, người ta vẫn tìm tới quán cơm Bà Cả Ðọi. Ða số Việt kiều về Sài Gòn đều tìm tới quán của bà. Cả khách ngoại quốc cũng vào gọi đĩa cà tím nướng, tô canh cải xanh...
Quán cơm Bà Cả bây giờ sạch sẽ khang trang, không còn là căn gác lùi sùi cho dân “đọi” tìm tới qua bữa. Dù sao giữa trung tâm thành phố, đó vẫn là quán cơm bình dân với những món ăn từ xưa đến nay không thay đổi: thịt đông, thịt lợn nấu giả cầy, đậu rán, dồi trường, rau muống xào, trứng non, trứng đúc thịt... Ðếm có tới gần ba chục món ăn bày ở quầy đặt ngay cửa ra vào. Quán Bà Cả đặc biệt không có thực đơn, khách cứ đứng ngắm nghía chọn lựa món ăn ngay đó, rồi có người bưng thức ăn đến bàn.
Chúng tôi gọi cá trê rán chấm nước mắm gừng, ốc nấu giả ba ba màu nghệ và thơm mùi tía tô, canh cua rau đay mướp mát rượi trưa nắng và một món mà khi vào các quán ăn Bắc kỳ, tôi không khi nào quên gọi là dưa chua, cà pháo chấm mắm tôm.
Dưa vàng muối chua vừa tới, cà pháo quả nhỏ, trắng nõn giòn tan chấm vào chén mắm tôm tim tím vắt chanh nổi xốp... Món ăn của quán bà Cả dù kho hay xào đều có màu vàng tươi, nhìn rất bắt mắt chứ không thâm màu như đa số các quán cơm bình dân khác.
Bà Cả đi một vòng quanh quẩn trong quán xem xét mọi thứ với vẻ hài lòng, bà ngừng trước mặt ân cần hỏi tôi có ngon miệng không.
Tôi chào bà Cả Ðọi ra về chẳng cần biết bà có thích chữ “đọi” hay không bởi vì cũng như bà Ba Bủng, bà Cả Cần... chỉ là những quán ăn nhỏ bé, bình dị nhưng một mai khi viết về lịch sử văn hóa Sài Gòn, e rằng người ta không thể quên tên!

Cách đây hơn 10 năm, tôi làm việc tại một công ty sát bên hẻm nhỏ này, thì quán vẫn còn bán. Sau này vì Bà Cả đã già lắm rồi (tới nay thì không rõ bà còn sống hay đã mất), nên các con của bà mỗi người tự mở 1 tiệm cơm mang tên Đồng Nhân nằm rải rác các nơi khác nhau như ở Trương Định, ở Tôn Thất Thiệp, Nguyễn Văn Cừ...
